Pho Bac, noodles and beer

Pho noodles could never go wrong with a cold bottle of beer. And beer with pho noodles tastes the way it should be, like drinking after work.
Vietnamese like steamed food, their famous spring rolls come usually as steamed but I prefer it fried. So far, fried spring rolls is the best I've tasted in Pho Bac
Banh Pho noodles cannot just be bought in our supermarkets. Banh pho is made from rice flour and it is sometimes called as chantaboon or rice sticks. The most ideal Banh pho for a pho dish aren't those you can buy packed in the supermarkets, but those that are made fresh.
Without Banh pho, pho dish is just another soup. It is the noodles that makes the pho a dish. It is not enough that the rice noodles just exist with the broth. Bad noodles make bad pho.
Banh pho should be fresh with a slippery texture smooth for an easy slurp and chewy to savor.
Pho bac's pho is great but they don't put enough servings of Banh pho and the seafoods and herbs were floating with the overflowing broth it could be mistaken as simply just a soup
